Fresh from the Bisbee Coffee Company Roaster: Organic Ethiopian Bean


The Bisbee Coffee Company Roast of the day is  our Organic Ethiopian beanThe dry grounds have a very sweet citrus and floral-laced quality, with a tenadam (rue) and a hint of fresh dill. The wet aroma has a unique blend of ginger and cinnamon, as well as the tenadam sweet herbal note I mentioned already, along with caramelized sugar. The cup is sweet and somewhat herbal, with fresh dill and lime, with honey-like sweetness. Sweet and rich, fruity, rummy, floral and tea-like, with good acidity.  From Oromia Coffee Farmers Union.


Certified organic Ethiopian coffee has only been available since 1999 when some producers were granted a waiver to bypass the government auction system. They can now sell direct to western importers through the cooperatives to which they belong, and cut out the services of two sets of buyers and an independent exporter to deal with the final processing. It also enables some of them to gain fair trade status, and receive a significant proportion of profits.

Flavored Black Teas



Black tea, or red tea as it's known in China, is the result of a complete oxidation of the leaf before being fired. First the leaf is spread out and left to wilt naturally, losing its stiffness and much of its weight. Then it's rolled, exposing essential oils to the air and starting the oxidization process.

Sulawesi Kalossi Grade 1



Sulawesi produces only around 70,000 bags of coffee each year at around 760m to 1070m above sea level. The coffee beans are graded 1 to 4 with 1 being the best quality and usually posessing the best cup characteristics. Bisbee Coffee describes this as having Baker's chocolate flavors, velvety body, clean cup. Dark roast.

Sulawesi lies to the North of Timor and the town of Kalossi is slightly to the south of the town of Rantepao in the growing region of Toraja. The coffee trees are grown on small plots around the villagers' houses and the entire family engages in the picking and processing. Coffee is even grown on the rice paddies that provide the staple diet. Coffee serves as a cash crop that supplements the family income.

The town of Naranjo, settled in 1830, was originally known as “Los Naranjos” (the Orange Groves) due to the abundance of orange trees in the surrounding area. Although the name has been shortened and the amount of orange trees lessened, this city of 35,000 has remained an important agricultural hub for Costa Rica. Formosa Style Oolong Tea


Formosa Oolong is grown on the island of Taiwan. It was given the name 'Ilha Formosa' by a Dutch sailor traveling on a ship from Portugal about 400 years ago. The Taiwanese population is made up of the descendants of the Malay-Polynesian aborigines who mixed with the migrant Chinese workers brought in by the Dutch. The Formosa Oolongs have developed ever since the tea was brought over from the Chinese province of Fuijian where it was first produced.

Brazil Moreninha Formosa

Bisbee Coffee Company's Flavor Factory

Upstairs of the Copper Queen Plaza, we house the beautiful coffee bean roaster, and all around the walls are 50 pound bags of coffee beans from around the world. In one corner of this room is the laboratory for test tasting and judging of the freshly roasted bean. We grind it, pour perfect temperature hot water over the blend to watch it foam (sign of freshly ground coffee) and then allow the palate to discern where on the "Coffee Taster's Flavor Wheel" it falls under.
This is done by both the acting roaster, and periodically by Rob Page himself, coming over from his office to see that this little factory of flavor is operating efficiently, and that the very best roast is meeting his discriminating taste.

Brain Power


There have been a lot of negative reviews of the consequences of consuming coffee because of the amount of caffeine that this substance contains. However, caffeine can play an important role in boosting your memory.

Here is the good news for you who like so much with coffee. Researchers in the US have shown that caffeine can boost memory in mice with Alzheimer's symptoms. Related to the fact, they trust that caffeine can have the same effect in people with Alzheimer's, besides as most people know that there is no cure yet for people with Alzheimer's. Therefore, they are now carrying the trials to see that possibility.

There is another feather in the coffee cap proposed by a study by Florian Koppelstatter, University Hospital Innsbruck & colleagues which says that drinking a cup of coffee with 100 mg caffeine can boost short-term memory. However, people should not rush to drink too much coffee for the sake of memory improvement.

Besides, Karen Ritchie at the French National Institute of Medical Research says that caffeine proved to be able to protect intellectual skills in older women. Female subjects who drank over three cups of coffee (or the same caffeine amount in tea) daily scored better in memory tests than those who only had one cup or less of coffee/tea daily.

Life is busy and it is easy to forget some of the smaller things that we take for granted. Our minds might have trouble focusing because of a conflict at work or stress at home. This is not an uncommon occurrence and unfortunately, it happens everyday to people of every age. Therefore, it might be time for you to consider the benefit of caffeine in relation to short term memory.
